INGREDIENTS: 1 lb shrimp, deveined and tail-off 1 box low-carb high protein pasta (e.g., @petespasta ) 3 tbsp unsalted butter 1/4 cup chopped onion 3 large cloves of garlic, minced 1/2 cup heavy cream 2 tbsp grated parmesan cheese Juice of 1 whole lemon Zest of 1/2 lemon Seasoning for shrimp: Salt, paprika, garlic powder 1/4 tsp salt (for the sauce) Pinch of black pepper Freshly chopped parsley, for garnish INSTRUCTIONS: 1. Cook your low-carb pasta according to package directions. Pat shrimp dry and season with salt, paprika, and garlic powder. 2. In a large skillet, melt butter over medium heat. Cook shrimp for 1-2 minutes per side. Remove shrimp and set aside. 3. In the same skillet, sauté the onion and garlic until fragrant. Pour in the heavy cream, lemon juice, and lemon zest. Bring to a gentle simmer. 4. Stir in the parmesan cheese until melted and the sauce thickens slightly. Season with salt and pepper. Return the cooked shrimp and add the drained pasta to the skillet.
