Preheat oven to 425°F (220°C). 2. Season the chicken with salt, pepper, thyme, rosemary, and 2 tbsp olive oil. Rub evenly over the surface. 3. Place chicken in a roasting pan. Roast in the oven for about 1 hour, or until the internal temperature reaches 165°F (75°C). 4. While chicken is roasting, toss potatoes with 2 tbsp olive oil, salt, pepper, and thyme.
