This easy recipe will show you how to make zeppoles perfectly, whether you fill them with classic custard cream, simple whipped cream, or sugar and cinnamon for a delightful sweet snack recipe. Yield: 4 Zeppoles INGREDIENTS • 1 cup Milk (2%) • 120 g Unsalted Butter • 1 tbsp Granulated Sugar • ¼ tsp Salt • 1 cup All-Purpose Flour • 4 Large Eggs Toppings: • Granulated Sugar • Cinnamon Sugar • Whipped Cream • Custard Cream • Maraschino cherries INSTRUCTIONS • In a medium saucepan, combine the milk, unsalted butter, sugar, and salt. Bring the mixture to a boil over medium-high heat. Once boiling, remove the pan from the heat and immediately stir in the flour. Beat the mixture vigorously until a firm, silky dough forms and pulls away from the sides of the pan (approximately 4–5 minutes). • Transfer the warm dough to the bowl of a stand mixer fitted with the paddle attachment. Mix on high speed for 5 minutes to release steam and cook off excess moisture. Reduce the speed to low and incorporate the eggs one at a time, ensuring each is fully absorbed before adding the next. The resulting batter should be glossy and smooth; if it appears too stiff, gradually incorporate up to half of an additional beaten egg until the desired consistency is reached. • Transfer the batter to a pastry bag fitted with a large star tip. On a sheet of parchment paper, trace 3.5-inch circles using a cookie cutter as a guide. Cut the parchment into individual squares around each traced circle. Pipe the batter along the guides, creating a double-layered ring to form a "nest." • Preheat cooking oil in a deep pot or fryer to 350°F. Using a flat spatula, gently lower each parchment square into the oil. As the batter sets, use tongs to remove and discard the parchment paper. Fry for approximately 5 minutes, turning frequently, until the zeppole are uniformly golden brown and crisp. • While still warm, toss the zeppole in granulated sugar or cinnamon sugar until well-coated.
