Focus on building bark, cooking to probe tenderness, and giving it a proper rest. Really impressed with this pit so far. Temps stayed locked in all night and I'm looking forward to testing out the wood chip feature on future cooks. Resting is where it's at with brisket. This one rested, wrapped in saran wrap and foil, for 17 hrs. I'm a FIRM believer in resting now. Man was it good!!
