INGREDIENTS: 500 g (1.1 lb) beans 150 g (5.3 oz) bacon 1 medium onion 1/4 yellow bell pepper 1 small beet 1 medium carrot 2 garlic cloves Water to cover 3 bay leaves Salt to taste Pepper to taste HOW TO: Cut the bacon into large cubes so it stays crispy outside and soft inside. Put the bacon in the pressure cooker without adding oil. Stir occasionally until well browned. While the bacon fries, prepare the carrot, beet, purple onion, garlic, and yellow chili. Leave them whole, as they will cook with the beans. When the bacon is browned, add the beans and whole vegetables to the pot. Fill with water, cover, and cook under pressure for 15 to 20 minutes. Once cooked, remove the vegetables and blend them in a blender with some beans and broth. Mix the vegetable cream back into the beans and finish with fresh chives and parsley.
