Cola turns clear when mixed with milk because the phosphoric acid in the soda curdles the dairy proteins, creating a dense sediment that settles to the bottom and strips away the caramel coloring. Here is how the chemical reaction breaks down: Acid Meets Protein: Cola is highly acidic due to phosphoric acid (pH \approx 2.5). Milk contains a collection of proteins called casein. Curdling & Binding: When the acid lowers the pH of the milk, the casein proteins clump together (curdle) and drop out of solution. As these heavy clumps form, they act like a net, binding to the caramel coloring molecules and suspended particles in the cola. Sedimentation: Over the course of an hour or two, these dense, protein-dye clumps sink to the bottom of the container. The Result: The liquid left at the top is a relatively clear, watery mixture of whey, phosphoric acid, and the remaining water and sugars from the soda.
