🍰 Date Cake with Homemade Date Caramel
Ingredients for the cake:
• 200 g low-fat Greek yogurt
• 1 egg
• 50 g gluten-free flour
• 30 g dates
Blend everything well until the dates are mostly broken down.
For the date caramel:
• 50 ml milk (I used oat milk)
• 30 g dates
Blend for 2-3 minutes until smooth and creamy.
Pour the cake batter into a baking dish and bake in a preheated oven at 180°C (356°F) for about 35 minutes, or until golden on top. Let it cool slightly.
Spread the date caramel over the cake and top with toasted pecans. You can also add some cinnamon if you like.
