🧄🧀 Cheesy Garlic Brioche Dough: * ½ cup (120g) warm milk * 1½ tbsp (18g) granulated sugar * 2¼ tsp (7g) active dry yeast * 2 large eggs (100g) * 2½ cups (320g) all-purpose flour * 1 tsp (6g) salt * 1 tsp (3g) garlic powder * 1 tsp (1g) Italian seasoning * 4 tbsp (56g) unsalted butter, softened Filling: * 4 tbsp (56g) melted butter * 3 cloves garlic, minced (9g) * 1½ cups (170g) shredded mozzarella cheese * 1 cup (113g) shredded Colby Jack cheese Egg Wash: * 1 egg (50g) * 1 tbsp (15g) milk 🧀 Instructions: In a large bowl, combine the warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy. Add the eggs and whisk together. Add the flour, salt, garlic powder, and Italian seasoning and mix until a shaggy dough forms. Knead for about 5 minutes, then gradually knead in the softened butter until fully incorporated. Continue kneading for 8–10 minutes until the dough is smooth and elastic. Place in a greased bowl, cover, and let rise until doubled in size in a warm area. Mix together the melted butter and minced garlic. Divide the dough into 6 equal pieces. Roll each piece into a small oval. Brush the surface with garlic butter and sprinkle with mozzarella and Colby Jack cheese. Fold one side of the oval over the other to enclose the filling. Using a sharp knife, make several slits across the folded dough, leaving one edge intact. Gently curve or fold the dough over itself slightly to create the layered brioche look, then place on a parchment-lined baking sheet. Repeat with the remaining dough. Cover the shaped rolls and let rise for 30–45 minutes until puffy. Preheat the oven to 350°F (175°C). Whisk together the egg and milk and brush over the tops of the rolls.
