In a medium bowl, whisk together the cake flour, baking powder, salt, and cinnamon. Set aside. In a separate large bowl, whisk together the sugar, coconut milk, yogurt, olive oil and vanilla until well combined.  Add the dry ingredient mixture to the wet. Fold with a wooden spoon or spatula until just combined. Then, add the chopped banana chunks and gently fold them in until evenly dispersed. Cover the bowl and place in the refrigerator to chill while you prepare the salted caramel. For the salted caramel, mix together the maple syrup, almond butter, avocado or coconut oil, and a large pinch of salt in a medium bowl, until well combined and smooth. You can adjust the runniness and saltiness to your liking by adding more maple syrup and salt, if desired (go off of your preferred taste)! Once ready to fry (the batter shouldn’t sit longer in the fridge because the bananas will release too much juice into it), fill a large, heavy-bottomed pot or Dutch oven with avocado oil, filling ~2” in the pan. Heat on medium-high until it reaches 350F-370F. Line a wire cooling rack with a thick layer of paper towels.  Once the oil is hot enough, use a medium cookie scoop (2 tbsp) to scoop the batter and drop directly into the hot oil. Add 6-8 fritters at a time, frying for 2-4 minutes and flipping halfway through, until golden. I tossed mine using a fork and continually flipped them over during the frying process. Don’t be shocked while they are frying, they won’t really float due to no egg being in the batter! Once finished, use a slotted spoon to carefully remove and transfer to the rack with paper towels. Repeat with the remaining batter until all of it is used up. Allow to cool for at least 10 minutes. Then serve warm with a dusting of powdered sugar and the salted caramel as a dip.
