@emthenutritionist: CREAMY SATAY PROTEIN POWER BOWL I love a big saucy salad and this one packs in 50g of protein and HALF your fibre needs. Tastes a little like a rice paper roll with peanut dipping sauce. So filling, but still fresh, crunchy and super satisfying. Serves 1 Approx. 535 kcal, 50g protein, 14g fibre Ingredients 1 heaped tbsp Greek yoghurt 1 tsp peanut butter 1 tbsp soy sauce 1 tbsp rice vinegar or lime juice 1 tbsp sriracha 1 tsp honey 2 spring onions, sliced ½ cucumber, sliced 100g butter beans ½ avocado, diced A handful of fresh mint (a must!) 2 tbsp edamame 100g cooked chicken breast, sliced or shredded Method Add the yoghurt, peanut butter, soy sauce, rice vinegar or lime juice, honey and sriracha to the base of a mixing bowl. Whisk together until creamy. Add the spring onions, cucumber, butter beans, avocado, mint, edamame and cooked chicken. Toss everything together until coated in the creamy satay dressing. if you can find it in the UK PB powder is AMAZING for any peanut based dressings. its basically just powdered peanuts. nothing else, but it fantastic in dressings & super easy to mix
