In a bowl, mix the water, honey, and yeast. Add the flour and mix until no dry flour remains. Add the olive oil and salt on top without mixing them in. Cover and rest for 20 minutes. 2. Coil fold until the oil and salt are fully incorporated. Cover and rest for 15 minutes. Add the olives and oregano, then coil fold until evenly distributed. 3. Cover and let the dough rise for about 2 hours, or until doubled in size. 4. Transfer the dough to a floured surface, gently flatten it without pressing the air out, and divide into 6 pieces. Shape as shown in the video, place seam-side up, sprinkle with flour, and rest for 20 minutes. 5.
