Ingredients For the Beef * 2 pounds sirloin steak, sliced very thin * 2 tablespoons cornstarch * 1/2 teaspoon baking soda * 3 tablespoons low-sodium soy sauce * 2 tablespoons avocado oil or olive oil For the Vegetables * 1 tablespoon avocado oil * 1 large yellow onion, sliced * 3 large carrots, peeled and julienned or thinly sliced * 5 cloves garlic, minced * 1 small head green cabbage, shredded For the Stir Fry Sauce * 1/2 cup low-sodium soy sauce * 2 tablespoons mirin * 1 tablespoon sesame oil * 1 tablespoon freshly grated ginger * 2 tablespoons brown sugar For the Slurry (optional) * 1 teaspoon cornstarch * 1 teaspoon water Instructions Step 1: Slice the Beef For thin slices, place the sirloin in the freezer for about 10 minutes before cutting. Using a sharp knife, slice the beef very thinly against the grain. Step 2: Tenderize the Beef Transfer the sliced beef to a large bowl. Add the cornstarch, baking soda, low-sodium soy sauce, and avocado oil. Toss until the beef is evenly coated. Let it marinate while you prepare the vegetables. Step 3: Make the Sauce In a small bowl, whisk together the low-sodium soy sauce, mirin, sesame oil, freshly grated ginger, and brown sugar. Set aside. Step 4: Cook the Beef Heat a large skillet or wok over medium-high heat and add a drizzle of avocado oil. Cook the beef in batches, being careful not to overcrowd the pan. Sear until browned, about 2–3 minutes per batch. Transfer the cooked beef to a plate. Step 5: Cook the Vegetables In the same pan, add the onion and carrots. Sauté until the onion becomes slightly translucent, about 4–5 minutes. Add the garlic and cook for about 1 minute, until fragrant. Stir in the shredded cabbage and cook until slightly wilted.  Step 6: Add the Sauce Pour the sauce into the vegetables and stir to combine. Return the cooked beef to the pan and toss everything together until the sauce evenly coats the beef and vegetables and everything is heated through.  Step 7: Thicken the Sauce In a small bowl, mix the cornstarch and water to make a slurry. Stir it into the stir fry and cook for another 30 seconds to 1 minute, just until the sauce is lightly thickened. I didn’t want it too thick, so this small amount gives it a nice glossy finish without making it heavy.
