The heat capacity thing makes sense, and I was also told it was about localized/effective concentration. If you add a little acid to a lot of water, it’s far more dilute than adding a bit of water to concentrated acid, so there’s less exotherm to begin with.

My teachers explained that pouring water into acid runs the risk of acid splashing out, which is also why it's important to wear proper protection.
