I think the thing they also gloss over is that after Gabrielle is turned, the mother-son relationship takes a backseat because they no longer adhere to human rules. It's to illustrate just how much more powerful the vampire maker dynamic is as opposed to the way humans define familial relationships.

Gabrielle was a horrible mother in the books and in the show. And the show has made it abundantly clear that Lestat does not want this incest relationship with her. She sexually abuses him and he accepts it because otherwise he will be all alone. His relationship with his mother, like Sam said is insidious and the worst person for him to have around. Lestat knows this, but he has been made to believe his only worth is his body. She was touching him before she became a vampire. So then not being humans anymore , but MORE isn’t the problem here. It’s what she did to him. The damage she has done and the abuse she puts him through even today. She wants sex with him, she wants to cross that line with him, when he doesn’t want it. He just wants a mother. He tells her he wants to companionship without the come. And she goes on about sex. He proceeds to tell her the blood is more intimate than sex. She immediately without even asking, cuts him and drinks from him. Violating him again and again. And he tries to cope by saying WE. That woman was horrible before she became a vampire and Lestat knows this.

one thing that's difficult to capture in the show that is explicitly stated in the books is that lestat views vampires as the pure embodiment of evil and his relationship with gabrielle further emphasizes just how deeply that evil runs
