My first impressions of pho in the early 90s was it was just ok. I grew up in Los Angeles with a wide variety of Asian cuisine so beef noodle soup abundant. Until one time in the early 2000s in Sacramento I had this pho that blew my mind!! I went there for lunch and came back for dinner! Ever since then I’ve been chasing a good bowl of pho now that I live in Texas!! 👍👍👍

What’s interesting to me is there are so many other banger dishes besides pho. I like pho, but Vietnamese grilled meats, the dishes with rice and vegetables are fantastic. Or any of the other noodle dishes. A well made bahn mi is a tier one sandwich.
