My tip is to spread jam on both halves, it stops the slice falling apart on your plate and gives a more even distribution of flavour 💖

I was taught to ‘drop’ the filled baking pan on the worktop a couple of times before baking to knock out any large air bubbles, and listen to the sponge when cooked…bubbling sound = underdone, quiet = done

Never seen a Vic sandwich eggs weighed. I’m still using the 4-4-4 recipe from school which I usually double up (now in grams). Perfect sponge everytime. Also where’s the vanilla bean or pinch of salt?

my late Mother used to make victoria sponge not with buttercream with fresh cream it was so delicious better with fresh cream one of my favourite cakes my mother was a brilliant cook I used to help my mother make cakes my reward was to lick the bowl out afterwards 😋😋😋😋😋

I always do the same 8 onzes 4 eggs tsp baking powder turns out very light baking for 50 yrs tried some other peoples recipie not the same tho ❤️🥰
