CHARD WRAPPED FISH W/ YOGURT SAUCE Grilling season is kicking off here in the next couple of days, so make this surprisingly simple and super special dish packed with layers of flavor and texture.  ¼ tsp salt, + more for seasoning  2 large Swiss chard leaves  ⅓ c. finely chopped preserved lemon (seeds removed) or ¼ c. preserved lemon paste ¼ c. finely chopped cilantro 1 tsp finely minced red chili  4 TB olive oil, + more for brushing & drizzling two 8-oz. skinless center-cut whitefish fillets, such as halibut 10 cherry tomatoes  1 c. plain yogurt  Zest & juice of ½ lemon, +  wedges for serving ½ tsp sumac Freshly ground black pepper Preheat grill to high. Bring a small pot of lightly salted water to a boil over medium-high heat. Prepare an ice bath in a medium bowl. Separate chard leaves from stems (2 leaves from each stem). Blanch in boiling water 10-15 seconds. Shock in ice bath; remove & pat dry.  Combine preserved lemon, cilantro, chili & 1 TB olive oil in a small bowl. Cut each filet into 2 equal-sized pieces (4 total); rub w/ preserved lemon mixture. Place each filet on narrow side of a chard leaf; roll up. Brush w/1 TB olive oil total. Season w/ salt. Thread tomatoes onto a long skewer; lightly brush w/ oil.  In a bowl combine yogurt, remaining 2 TB olive oil, lemon zest & juice, sumac, salt & pepper. Spread on a serving plate.  Lightly oil grill. Grill tomatoes & fish until charred and fish is cooked through, 3-4 min. per side. Remove tomatoes from the skewer onto the yogurt. Arrange fish on yogurt, drizzle w/ olive oil. Serve with lemon wedges.
