Happy St David’s Dsy! Welsh cakes are a traditional Welsh treat dating back to the 19th century. They're something between a scone and a cookie and best served warm with a cup of tea. Instead of being baked in the oven, they're cooked on a griddle or frying pan, which gives them a lightly crisp outside and a soft, tender middle. Here's my family recipe ~ * 3 cups flour * 1 cup white sugar * 11/2 tsp baking powder * 1 tsp salt * 1/2 tsp soda * 1 cup butter * 3/4 cup currants * 1/4 cup red and green glazed cherries (or any dried fruit you like) * 1 tsp nutmeg * 1/2 tsp mace * 2 eggs * 6 Tbsps milk (more if needed Mix as for biscuits, cutting in the butter and flour mixture with a pastry cutter.
