The reason why you have both n type and p type is to create the depletion region otherwise known as a PN junction. The concept and calculations used for PN junctions are used in both mosfets and transistors.

I don't really like the "conductors and insulators" way of looking at materials, there's just no proper definition for where the boundary is, and it's not like I've heard either term used in a university or professional environment possibly ever
Also, I honestly prefer the view of transistors as current amplifiers (at least BJTs are, we didn't directly study MOSFETs), and that by keeping them at either saturation or cutoff, you can effectively make them act like a switch
