Biscoff no-bake cheesecake 🤎 creamy and so delicious! Ingredients: Crust • 375 g Biscoff cookies, finely crushed • 170 g salted butter, melted • Pinch of salt Filling • 680 g cream cheese, room temperature • 120 g powdered sugar • 100 g Biscoff spread • 360 g heavy whipping cream, cold • 1 tsp vanilla extract • Pinch of salt Top Layer • 150 g Biscoff spread, melted Instructions 1. Crush the Biscoff cookies in a food processor until very fine. 2. Melt the butter. In a bowl, mix the crushed cookies with melted butter and a pinch of salt until fully combined. 3. Press the mixture firmly into the bottom of a round springform pan, creating an even crust. Place in the fridge while preparing the filling. 4. Whip the cold heavy cream until fluffy and medium-stiff peaks form. Set aside. 5. In a separate bowl, beat the cream cheese, powdered sugar, Biscoff spread, vanilla extract, and a pinch of salt with a hand mixer until smooth and light. 6. Gently fold the whipped cream into the cream cheese mixture until fully combined and creamy. 7. Spread the filling evenly over the chilled crust and smooth the top. 8. Melt the Biscoff spread for the top layer and carefully pour it over the cheesecake. Tilt the pan gently to spread it evenly. 9. Decorate with crushed Biscoff cookies around the edges and place a cookie on top for decoration. 10.
