Garnish with fresh coriander and serve hot with homemade cheesy naan. Techniques & Tips: * Be careful not to over-pressure-cook the red kidney beans. * Add lobia cooking water to help distribute all the flavours throughout the beans. * Fry the onions until golden brown before adding the tomato paste. * Do not add salt to the lobia during pressure cooking; add it to the masala instead. * Important: Red kidney beans must be thoroughly cooked to make them safe to eat.
