Chicken Saltimbocca is one of those dishes my whole family truly loves, and the best part? It comes together in about 20 minutes. Easy enough for a busy weeknight, but elegant enough to serve when you have company. Crispy prosciutto, fresh sage, and a simple Dijon cream sauce… comfort with a little polish. Chicken Saltimbocca (serves 4–6) Ingredients 2 chicken breasts, sliced into 6–8 cutlets 6–8 slices prosciutto 25–30 fresh sage leaves Salt & pepper ½ cup flour 3 Tbsp olive oil 1½ Tbsp butter 2 cloves garlic, minced ½ cup white wine ½ cup chicken stock 2 Tbsp whole grain Dijon mustard ½ cup heavy cream or full-fat coconut milk Instructions Slice chicken into thin cutlets. Season one side with salt & pepper. Top with 2 sage leaves and cover with a slice of prosciutto, pressing gently so it sticks. Lightly dredge in flour and shake off excess. Heat a large skillet over medium heat with olive oil. Fry remaining sage leaves until crisp and deep green. Remove to a paper towel, leaving the oil in the pan. Add butter. Cook half the chicken prosciutto-side down until golden and crisp, 3–4 minutes. Flip and cook another 3 minutes. Remove and repeat with remaining chicken. In the same pan, sauté garlic until fragrant. Deglaze with white wine, scraping up the browned bits. Reduce by half. Add chicken stock, Dijon, and cream. Season lightly with salt and generously with pepper. Return chicken (and juices) to the pan and simmer until the sauce thickens and coats the back of a spoon. Finish with crispy sage.
