starting a new series where every monday i take my basic sourdough loaf and see just how far we can push it. 🍎 first up - caramel apple cider sourdough. i swapped the water for apple cider, added a little brown sugar, cinnamon + vanilla, then folded in buttery caramelized apples. the best part? we’re making every loaf in a loaf tin because i think it makes fun inclusions so much more approachable. so… are we loafing it or leaving it? 🍎 RECIPE ⬇️ caramel apple cider sourdough -one 9x4 loaf tin 330 g apple cider 100 g active sourdough starter 20 g brown sugar 1 tsp vanilla bean paste 475-500 g bread flour 1/2 tsp cinnamon 10 g salt caramel apple inclusion 175 g apple, peeled + diced very small 3 tbsp (28 g) butter 1/4 c packed brown sugar 1 tsp cinnamon generous pinch of salt 1 tsp vanilla bean paste Mix the apple cider, starter, brown sugar and vanilla. Add 475 g flour, cinnamon and salt. Mix until combined, adding a little more flour only if needed. Cover and rest 1 hour. Meanwhile, melt the butter and add the finely diced apples. Cook for a couple of minutes, then add brown sugar, cinnamon and salt. Continue cooking until the apples are tender but still hold their shape and the liquid has reduced to a thick, sticky caramel coating. Remove from heat, stir in vanilla and cool completely. At the first stretch and fold, gently flatten the dough in the bowl. Spread the cooled caramel apples over the dough and dimple them in with your fingertips. Stretch and fold the dough over the apples. Continue your normal stretch and folds, then bulk ferment until the dough has risen about 50-60%. Shape gently - don’t add any additional filling during shaping - and place in a loaf tin. Proof/cold proof if you want.  Bake covered at 425°F for 35 minutes, then uncover and bake another 10 minutes, or until fully baked @ 205 #s#sourdoughs#sourdoughbreada#applecidersourdoughc#caramelapplesourdoughrecipe
