One pot Creamy Chicken Curry 🍛 Ingredients: 4 Boneless, skinless chicken thighs Chicken salt, black pepper, and paprika (for seasoning) 2 tbsp oil 1 onion, thinly sliced 4 cloves garlic, finely chopped 3 tbsp red Thai curry paste 1/2 red bell pepper, sliced 1 jalapeño, sliced (optional) 1 tbsp ginger paste 1/2 tbsp curry powder 1/2 tbsp paprika 1/2 tbsp black pepper Salt, to taste 1 can coconut milk Zest of 1 lime Juice of 1 lime 1/3 cup basil, chopped 1/4 cup cilantro, chopped  Instructions:  -Heat a large pan over medium-high heat and add 2 tablespoons of oil. -Add the chicken thighs and season with salt, black pepper, and paprika. Cook for about 4 minutes on one side. Flip, season the other side with salt, black pepper, and paprika, and cook for another 4 minutes. The chicken does not need to be fully cooked through, as it will continue cooking in the sauce. -Remove the chicken from the pan and set aside. -In the same pan, add the onion and garlic. Toss and cook for about 1 minute. -Add the Thai curry paste and cook for another minute. Stir everything together well for about 30 seconds until combined and fragrant. -Add the bell peppers, jalapeño, ginger paste, curry powder, paprika, salt, and black pepper. Stir well and cook for about 3 minutes. -Pour in the coconut milk. Add a small splash of water to the empty can, swirl it around to get the remaining coconut milk, and pour it into the pan. -Add the lime zest and lime juice. Stir well and allow the sauce to simmer and thicken for about 3-4 minutes. -Slice the chicken and return it to the pan along with the basil and cilantro. Stir well and let everything simmer for another 3-4 minutes over medium-high heat until the sauce thickens and the chicken is fully cooked.
