I followed this step by step. It barely rose, then when I had to bake it it was so doughy 😳

Do you need a lid on your bread pan? Also what is a strong Canadian flour? What brand do you use?

I'm confused! Why bother with all the hassle of making sure starter is active, if this is all we need to do. What am I missing?

After a bit of advice please. My sourdough has a nice open crumb but I never get much oven rise. 100g starter, 280g water, 400g strong flour, 10g salt. Three rounds of stretch and fold every 30mins then shape/tension and put in the fridge over night 14hr max. Oven 250 straight from the fridge score and into the Dutch oven for 25mins lid off220 another 10mins or until desired colour. I get very little rise in the oven and I’m not sure why. More proving or less??? 😂😂

Hoping this might work in a bread machine? Literally just put the ingredients in the bread machine and set it off. Anyone tried it?
