300g water, 150g starter, 2 tsp olive oil, 1 tsp honey, 500g bread flour, 10g salt. Cover leave 30 minutes, 4 times stretch and fold, two times. Fold and put in tin until double in size. Oven 40 minutes

After a bit of advice please. My sourdough has a nice open crumb but I never get much oven rise. 100g starter, 280g water, 400g strong flour, 10g salt. Three rounds of stretch and fold every 30mins then shape/tension and put in the fridge over night 14hr max. Oven 250 straight from the fridge score and into the Dutch oven for 25mins lid off220 another 10mins or until desired colour. I get very little rise in the oven and I’m not sure why. More proving or less??? 😂😂
