Berries & Cream Cake 🍰  Chiffon Cake: 6 large eggs - separate yolks and whites  1/4 tsp cream of tartar  1/2 cup granulated sugar  3/4 cup cake flour  1 tsp baking powder 1/2 tsp salt 1/4 cup vegetable oil 1/3 cup whole milk 1TB vanilla extract  Whipped Cream Cheese Frosting: 8 oz cream cheese, room temp  1/2C-3/4 cup powder sugar, sifted 3-1/2 cups cold heavy cream  1 TB vanilla bean extract  Strawberry simple Syrup: 1-1/2 cups fresh or frozen strawberries  1 cup granulated sugar  2 cups water  3 cups of berries of choice. - sliced strawberries, raspberries, blackberries, or blueberries mixed with a couple tablespoons of sugar  Instructions: chiffon cake: 1. Preheat your oven to 350 degrees F 2. In a large mixing bowl add in your egg whites and cream of tartar, mix until you the whites look like cappuccino foam then start adding in your sugar a spoonful at a time. Beat until stiff peaks form and the eggs whites stand up straight when you pull out the beaters.  3. In a separate mixing bowl, add in your egg yolks, oil, vanilla extract, and milk. Mix until well combined. Sift over your cake flour, and then add in your baking powder and salt. Mix until everything is evenly incorporated.  4. Add in 1/3rd of your egg white mixture into the yolk batter. Gently fold the meringue into the batter until fully incorporated. Repeat with the last two parts of your egg whites until everything is incorporated and smooth.  5. Pour into a ONLY parchment paper lined chiffon cake pan (or 3 regular cake pans if you don’t have a chiffon cake pan) - do not grease the pan with anything, the cake needs the sides to grip onto to rise as it bakes.  6. Bake your cake for 25-32 minutes until golden brown and a toothpick inserted in the middle comes out clean.  7. Immediately turn the cake upside down to cool completely on a cooling rack.  cream cheese whipped cream: 1. In a large bowl add your cream cheese and beat until smooth. Add in your powder sugar and beat again until fully incorporated.  2. Pour in a little bit of heavy cream to the cream cheese at a time until any clumps smooth out then add the remaining amount of heavy cream along with your vanilla extract. Whip until you get semi stiff peaks, set aside while you make your simple syrup. Strawberry simple syrup: Chop up about 2 cups of strawberries, add to a medium sized pot along with 1 cup of granulated sugar and 2 cups of water. Bring to a boil. Then gently mash the berries using a potato masher. (Or the back of a spoon while straining.) - strain the mixture into a measuring cup , completely cool before storing in an airtight jar.
