Smoked Brisket on the Napoleon Grill Thank you @Napoleon Products for the new Prestige PRO 665 — the perfect smart grill for slow, fire-driven cooking ♥️ This time we cooked a full brisket from morning to evening using the indirect method — no direct fire underneath, just steady heat, smoke, and time. We trimmed the brisket first, removing hard fat and shaping it for a more even cook. Then we cooked it in two stages: First stage: low and slow with the built-in smoker function, building smoke flavor and bark. Second stage: foil boat. It protects the bottom but keeps the top exposed, giving the brisket a drier, stronger crust. If you prefer a softer bark and more traditional texture, butcher paper wrap is a great option too. We cooked by temperature, using three probes at the same time: one in the point, one in the flat, and one for the ambient grill temperature. Once the thinnest part of the brisket reached 200°F internal temperature, we pulled it from the grill and let it rest for 2 hours before slicing.
