@daniela_dish: Cod Piccata This is a light and refreshing dish that's got summer written all over it. It takes just minutes to prepare and uses only a handful of ingredients for an absolutely delicious meal. It's simple enough for an easy weeknight but elegant enough to serve guests as well. 3-4 cod filets about 1.5 lbs Salt and pepper 1/2 c flour 6 tablespoons butter divided 2 tablespoons olive oil 1/4 c lemon juice 1/3 c clam juice or seafood stock 2 tablespoons capers 1/4 c chopped parsley 1 lemon sliced Salt and pepper the cod filets and coat them with flour. Heat 3 tablespoons of butter with the olive oil in a skillet. When the butter foams add the cod and cook for 3-4 minutes on each side. Carefully remove the cod from the pan and set it aside. Lower the heat and add remaining butter, lemon juice, clam juice, capers and parsley. Bring to a boil reduce heat and let it simmer for a few minutes until it starts to thicken. Add the lemon slices and cod back to the skillet. Cover and cook over low heat until the cod is warmed through basting with the juices as it warms. #codpiccata #SummerFishRecipe
