The study: UC Davis, 2025, Applied and Environmental Microbiology, by Wei and Marco. Fermented cabbage protected the gut lining from inflammation where raw cabbage and brine did not.
Salt ratio: about 2% of the weight of your shredded cabbage, around 20g per kilo. Work it by hand until it releases liquid. That liquid is your brine, no water added.
Fold in grated carrot, whole cranberries, and caraway. Pack tight, keep it submerged under its own brine, ferment a few days to a week, then fridge.

Anyone here know about SIBO??? I WANT to do this. BUT everything I hear is do not do anything fermented. UGH! My conscious mind my logical mind says “I need reall fermented food to heal my gut” But everything I am fed from GI doc functional med Doc says no. HELP!?!?
