(Mix in a separate bowl to make sure it’s all mixed in or just mix it in the bowl)  Fold in using a rubber spatula. Add the chocolate and fold in once more. Chill in the fridge for 20-30 minutes.  Preheat the oven to 350F, line a baking pan with parchment paper.  Once chilled, take the peanut butter out of the freezer and divide the dough into 8-9 pieces. Flatten the dough, place the frozen peanut butter then close. Make sure to pinch all sides. Bake for 11-12 minutes. Make sure to let the cookies cool down before picking them up.
