In rice water would probably be aspergillis orzae, a bacteris found on rice and the plants which is used to make the doengang bricks to make Korean soy sauce

❤️lactobacillus. i use it to start any one of a number of different ferments bc it outcompetes spoilage bacteria and mold and allows the yeast to do its thing
