Hot Honey Taco Beef Crunchwraps When you need something for dinner that’s easy to make, crunchy, cheesy, saucy and full of flavour make these 😍  It’s got hot honey taco beef, melted mexicana cheese, crunchy Chilli Heatwave Doritos and chipotle mayo 😮‍💨 Ingredients (serves 2):  200g 5% beef mince
1 tbsp taco seasoning
1 tbsp tomato purée
50ml water Hot Honey 15g honey
1 tsp hot sauce
Pinch of mild chilli flakes Chipotle Mayo 50g light mayonnaise
½ tsp chipotle paste
1 tsp lime juice To Serve 20g tortilla chips (I use Chilli Heatwave)
2 large tortilla wraps
40g Mexicana cheese, sliced or grated
40g shredded lettuce
1 large tomato, diced
2 mini tortilla wraps Mix together the hot honey and set aside. Fry the beef mince until browned then add the taco seasoning and tomato purée for a minute.  Pour in the water and cook for 2-3 minutes until reduced Stir through half of the hot honey mixture Mix the chipotle mayo.  Spread half of the chipotle mayo into the centre of each large wrap. Top with half of the beef then the cheese.  Top with the tortilla chips, lettuce and tomatoes before placing over the mini tortilla.  Fold the edges of the large wrap tightly towards the centre, working around the wrap until fully sealed. Place seam-side down into a dry frying pan over a medium heat. Cook for a couple of minutes each side until golden  Slice each crunchwrap in half & drizzle over the remaining hot honey before serving.
