Sponge Idli ⚪️✨ Soft, fluffy & super spongy Sponge Idlis that stay soft and delicious! 🤍 🌿 Recipe ✨ Whole Urad Dal – 1 cup Wash 2–3 times and soak with about 3 cups water + 1 tbsp fenugreek seeds for at least 3 hours. ✨ Idli Rava – 2 cups Soak for 2 hours. ✨ Thin Poha – ½ cup Soak for 30 minutes. 🌿 Blend Add soaked urad dal + ½ cup water + 5 ice cubes to a blender. Grind until smooth and transfer to a bowl. Add soaked poha + ½ cup cooked rice + ½ cup water to the blender. Grind into a smooth paste and add to the urad dal batter. Strain the soaked idli rava completely and add it to the batter. ✨ Salt – 1 tbsp Mix well. Mixing with clean hands can help encourage better fermentation. Cover and ferment for 8 hours or overnight. 🌿 Steam Gently mix the fermented batter once. Grease the idli plates and fill the molds ¾ full. Steam in a preheated steamer for 10–12 minutes on medium heat. Check with a toothpick—it should come out clean. Rest for 2 minutes, remove and serve hot! 🤍 Why use a cloth?
