Bukhari (بخاري) Ingredients: - 2 onions  - 4 carrots - 1 kg of chunky lamb pieces - 2 cups of @canarybasmati  - 1 cup of brown raisins - 1/2 cups blonde raisins - a touch of oil - 3 bay leaves - 1 stick of cinnamon  - 4 cardamom pods  - salt & pepper - 1 tbsp tomato puree - 3 large tomatoes - 2 tbsps toasted cumin seeds  - start by slicing the onions and carrots and make sure that the carrots are a tiny bit chunky. - sauté the carrots in a touch of oil till they wilt a bit then add the raisins. Keep stirring till you see that the raisins have slightly puffed up then remove them from the pot. - sauté the onions in the same pot then add the lamb along with the aromatics. Seasonings tomato puree and the blended tomatoes. - let them cook for about 10 minutes till most of the juices have evaporated. - add 6 cups of water to the pot and let the lamb cook till super tender. ( 1 & 1/2 hours)  - meanwhile wash and soak 2 cups of @canarybasmati for 30 minutes. - once the lamb is tender remove it from the pot and broil it in the oven. ( you can actually keep it in the pot and add the rice on top) - add the rice to the pot and make sure that the stock level is about a finger tip above the rice. - let it boil uncovered for about 5-6 minutes till you see the rice grains soaking the stock and rising. Place the carrots and raisins on top. Cover and let it steam on the lowest heat possible for 20 minutes. - remove the carrots and raisins for garnish and flip the pot on the serving plate. - garnish with the carrots and raisins.
