High-Protein Chicken Lasagna Ingredients Chicken Bolognese * 500g chicken breast, diced or minced * 1 onion, finely chopped * 1 carrot, grated * 2 celery stalks, finely chopped * 1 can (400g) chopped tomatoes * 1 jar tomato pasta sauce with onions * 1 tsp sea salt * 1 tsp garlic granules * 1 tsp smoked paprika * ½ tsp white pepper * 1 tsp Italian herbs High-Protein White Sauce * 2 tubs rich & creamy cottage cheese * 200g herb soft cheese * Parmesan cheese (to taste) * 250ml oat single cream * ½ tsp garlic granules * ½ tsp white pepper * ½ tsp Italian herbs For Layering * Lasagna sheets * Light cheddar cheese, grated * Mozzarella cheese, grated * Parmesan cheese, grated * Torn mozzarella for the top ⸻ Method 1. Cook the Chicken Season the chicken breast with: * Sea salt * Garlic granules * Smoked paprika * White pepper Cook until lightly golden, then remove from the pan and set aside. 2. Make the Chicken Bolognese In the same pan cook: * Onion * Grated carrot * Chopped celery Cook until softened. Return the chicken to the pan and add: * Chopped tomatoes * Tomato pasta sauce * Italian herbs Simmer for 20–25 minutes until thick and rich. 3. Make the High-Protein White Sauce Add to a blender: * Cottage cheese * Herb soft cheese * Parmesan cheese * Oat single cream * Garlic granules * White pepper * Italian herbs Blend until completely smooth and creamy. 4. Assemble the Lasagna Layer as follows: 1. White sauce 2. Lasagna sheets 3. Chicken bolognese 4. Cheddar, mozzarella and parmesan Repeat until all ingredients are used. Top Layer Finish with: * White sauce * Cheddar cheese * Parmesan cheese * Torn mozzarella 5. Bake Bake at 190°C (170°C fan) for 35–45 minutes, until golden brown and bubbling. 6. Serve Allow to rest for 10–15 minutes before slicing. Garnish with: * Spring onions * Extra parmesan
