I’m all for tradition but wouldn’t it be better to pan sear properly, build the sauce.. then finish in the sauce ? This looks boiled.

Steak should go in first with minimal oil - get a nice crust - remove from pan - add butter onion all that crap - deglaze - add back in steak finish in the sauce
