@beatthebudget: 5 lunches for £5 ~ Sweet & Sour Noodles Chicken Meatballs ❤️🔥 This is a lunch recipe that you can whip out when you cba to make a sauce, but you still want a delicious balanced meal. Plus that huge jar is only 85p?! Hope you love it! Save & like to try xxx Ingredients 1 jar of sweet & sour sauce (£0.85) 250g egg Noodles (£0.95) 500g chicken mince (£2.59) 1 onion, sliced into chunks (£0.10) 1 red cabbage (£0.89) 1 lime (£0.24) Cupboard Essentials 2 tsp olive oil 1 tsp garlic granules 1/2 tsp white pepper/black pepper 1 tsp ground ginger (if you have) Salt 300ml chicken stock Method 1. Combine the chicken mince with the garlic granules, pepper, ground ginger and season with salt. Form into medium/small meatballs, around 20 so that you have 4 per serving. 2. Preheat a pan over a medium/high heat, then add the oil and meatballs. Leave to brown for around 3 minutes before giving the pan a shake. Continue to cook for 5 more minutes. 3. Set the meatballs aside and deglaze the pan with a splash of stock. Add the onions and cook for around 4 minutes, season with salt and pepper. 4. Next, pour the sweet and sour sauce into the pan, along with the stock. Stir to combine and add the meatballs back into the pan. Cook for 10 minutes over a medium/low heat. 5. Meanwhile, cook your noodles, then rinse in cold water to remove the starch. Add 2 ladles of the sweet and sour sauce to your noodles in a bowl and stir to combine. 6. Divide the sweet and sour meatballs into 5 containers, then add the noodles, then the cabbage on top. When it’s time to eat, remove the fresh cabbage from the top and reheat the noodles & meatballs for 2 minutes on high. Add a squeeze of lime & enjoy! #mealprep #noodlerecipe #budgetmeals

Looks delicious, I’ve become a huge fan of red cabbage again recently. You should make a red cabbage and shittake satay stir fry!!!! Recently made it for my wife and it was delicious. Cheap as chips too
