Giant beans, or Gigantes Plaki, is a classic Greek dish made with large beans baked in a rich tomato sauce, flavored with herbs, olive oil, and vegetables like onions, carrots, and garlic.The beans are cooked soft on the inside while still holding their shape on the outside. It's not just delicious, but also super healthy, packed with fiber and plant-based protein. • 1 pound (500g) giant beans • 1/4 cup (60ml) extra virgin olive oil • 1/3 cup (80ml) cognac or white wine • 1 cup (240ml) tomato sauce • 1 2/3 cup (400ml) water • 2 tomatoes, peeled and chopped • 2 carrots, diced • 1 green pepper, diced • 2 onions, chopped • 3 green onions, sliced • 2 garlic cloves, minced • 4 celery stalks, chopped • 7 oz (200g) feta cheese, crumbled • ½ bunch fresh parsley, chopped • Chili flakes (bukovo), salt, and pepper to taste INSTRUCTIONS • Soak the beans: Place the giant beans in a large bowl, cover them with water, and add 1 tablespoon of salt. Let them soak at room temperature for at least 8 hours. Drain and rinse. • Cook the beans: Bring a large pot of water to a boil, add 1 tablespoon of salt, and the soaked beans. Simmer on medium-high heat for 1 hour. Drain and rinse with cold water to stop the cooking process. • Sauté the vegetables: Heat the olive oil in a pan over high heat. Add the onions and garlic, and sauté for 2 minutes. Then, add the green pepper, celery, carrots, and green onions, sautéing each vegetable for 2 minutes as you add them. • Deglaze and simmer: Pour in the cognac or white wine and cook until the alcohol evaporates. Add the tomatoes, tomato sauce, water, salt, pepper, and chili flakes. Cover and simmer for 25 minutes. • Bake the beans: Preheat the oven to 180°C (350°F). Combine the cooked beans, vegetable mixture, and chopped parsley in a baking dish. Make sure the liquid covers about 1/3 of the mixture. If it's not enough, add some water before baking. Cover with a lid or aluminum foil and bake for 35 minutes. • Finish with feta: Once out of the oven, stir in the crumbled feta and mix gently. Top with more crumbled feta and chopped parsley.
