@francescogranatagrecia: Linguine all’ astice! For me, a great seafood pasta isn’t about using many ingredients but it’s about respecting every single step of the process. I gently sautéed the lobster with extra virgin olive oil, garlic, chili, and parsley stems. The meat was then removed, while the shells and claws were used to create a light bisque, delicate, elegant, and full of flavor. The bisque was strained directly over sweet cherry tomatoes, blended, and filtered once again to achieve a silky, refined sauce. The linguine finished cooking directly in this light bisque, absorbing every layer of flavor from the sea. Just before serving, I added the lobster meat and a touch of fresh parsley.
