this easy dinner is definitely staying in my dinner rotation 🤭 #marrymechicken #DinnerIdeas #easydinnerideas #cooking #Recipe Marry Me Chicken Recipe 🤍🍲✨ Ingredients • 2 tbsp butter • 3 cloves garlic, minced • 2 cups shredded rotisserie chicken OR 2 boneless skinless chicken breasts, diced • 1 small onion, diced • 2 cups carrots, diced • 1 tbsp tomato paste • 1 tsp Italian seasoning • ½ tsp paprika • 4–6 cups chicken broth (depending on how thick or soupy you like it) • 1 cup heavy whipping cream • 1 cup chopped sun-dried tomatoes • ½–1 cup grated Parmesan cheese • ½–1 cup shredded mozzarella cheese • 16 oz potato gnocchi • 2 cups fresh spinach • Salt & pepper, to taste Directions Melt butter in a large pot over medium heat and cook the garlic for about 30 seconds until fragrant. If using chicken breasts, add them now and cook until no longer pink, about 5–7 minutes. Add the onions and carrots and cook for 3–4 minutes until softened. Stir in the tomato paste, Italian seasoning, and paprika. Pour in 4–6 cups chicken broth and bring to a simmer. Stir in the heavy whipping cream and sun-dried tomatoes, then add the shredded rotisserie chicken if using. Mix in the Parmesan and mozzarella cheese until melted. Add the gnocchi and cook for 3–5 minutes, or until tender. Stir in the spinach and cook for 1–2 minutes, until wilted.
