Cheesy Garlic Confit Chicken Loaded Potato 🧄🥔 INGREDIENTS Potatoes: 1 large russet potatoes Olive oil and salt Garlic Confit Butter: 3 tbsp unsalted butter, softened 1/4 cup garlic confit cloves (soft, drained) 3 tbsp grated Parmesan 1/4 tsp chili flakes (optional) 1 tbsp chopped parsley Salt + black pepper, to taste Protein: 1/2-1 cup shredded cooked chicken Toppings: 1/2 cup shredded mozzarella Chopped parsley INSTRUCTIONS Bake the potatoes: Preheat oven to 425°F (220°C). Rub potatoes with olive oil and salt. Bake for 50–60 minutes until soft inside and crispy outside. Make the garlic confit butter: Mash garlic confit into a smooth paste. Mix with butter, Parmesan, chili flakes, parsley, salt, and pepper until creamy. Load the potatoes: Cut potatoes open lengthwise. Fluff the inside with a fork. Add garlic confit butter first (let it melt into the potato). Then add 1/2 cup shredded chicken per potato. Melt the cheese: Top with mozzarella. Bake for 3-5 minutes until melted.
