Simple basket recipe with bread, dates, olives, and lentil paste Ingredients 4 flatbreads or rustic pieces of bread 1 cup dates 1/2 cup green and black olives 1 cup cooked lentils 1 tablespoon olive oil 1 teaspoon lemon juice 1 pinch of salt 1 pinch of cumin, optional Fresh herbs for garnish Instructions Cook the lentils in water until tender. Drain well and place in a bowl. Mash the lentils with olive oil, lemon juice, salt, and cumin. Mix until you get a rustic paste. Quickly warm the breads in a frying pan or at a low oven temperature. Place the breads in a simple basket. Arrange the dates beside them. Add the olives to a small bowl or directly into the basket. Put the lentil paste into a small clay or ceramic pot. Finish with fresh herbs. Serve as a humble, shareable, and comforting meal.
