Crustless Cottage Cheese & Spinach Quiche This quiche has quickly become a weeknight staple in our home! It's simple to prepare and loaded with nutrients. The kids enjoy it for breakfast or dinner, and I love how comforting it is on a busy day. Ingredients: 1 small onion, diced 1/2 bell pepper, diced 2 cups fresh baby spinach, chopped 1 tbsp oil 4 large eggs 1 1/2 cups cottage cheese 1/2 cup milk 1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella) 1/2 tsp garlic powder 1 tsp Italian seasoning Salt and pepper to taste Instructions: 1. Preheat the oven to 175°C (350°F) and grease a 23 cm pie dish or quiche pan. 2. In a skillet, heat the oil over medium heat. Add the diced onion and bell pepper; sauté for about 5 minutes or until softened. 3. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and allow to cool slightly. 4. In a large mixing bowl, combine the cottage cheese, eggs, milk, garlic powder, Italian seasoning, salt, and pepper. Whisk until smooth. 5. Fold in the sautéed vegetables and shredded cheese until evenly combined. 6. Pour the mixture into the prepared pie dish and spread it evenly. 7. Bake for 35-40 minutes, or until the center is set and the top is lightly golden. 8. Allow to cool for a few minutes before slicing and serving warm. Yields: 6-8 servings Prep: 10 minutes Cook: 40 minutes Total Time: 50 minutes
