French Onion Soup🧅🌿 Caramelizing the onions may be a bit time consuming, but it is simple to make and honestly nothing is more cozy!! That cheese pull?! Ingredients: * 5 pounds of yellow onions (roughly 5-6 onions) * 3 tbsp butter * 3 tbsp olive oil * 1.5 tsp salt * 1 tsp pepper * 2 tsp sugar * 4 cloves garlic * 3 tbsp flour * 2/3 cup white wine * 8 cups beef broth * Few sprigs of fresh thyme * 2 bay leaves * 1 tsp rosemary (forgot to show in video) * 1 tbsp Worcestershire Sauce * salt to taste * baguette + olive oil for toasting * Block of Gruyère cheese Get ready to cry… unless you have contacts haha. Thinly slice your onions and add to a large bowl. In a large pot, add in the butter and olive oil on medium high heat. Pour in the onions and add the salt, pepper, and sugar. Stir. The caramelizing process is going to take 45 minutes.  Leave the onions alone and stir every 5 minutes. After 15 minutes, turn the heat to medium. Continue to stir every 5 minutes until you hit 30 minutes. Then you’ll need to babysit them, stirring roughly every 2 minutes until you hit 45 minutes. When you get burnt spots on the bottom of your pot, deglaze with a little water. That means you just pour water on the burnt spot, let it sizzle, and scrape with your spatula👍🏻 Add in the garlic and let that cook for about 2 minutes. Then add the flour and stir. Let that cook for roughly 3ish minutes. Pour in the white wine and stir/scrape the bottom of the pot. Then add in your beef broth, fresh thyme, bay leaves, Worcestershire sauce and about another 1/2 tsp of salt. Stir and cover. Let that cook on medium low for 30 minutes.  Cut up your baguette and spread/drizzle on some olive oil or butter. Broil them for a few minutes until toasted. Then set the heat to 500°F. Shred your cheese. Pour your soup into a oven safe bowl. Add a little cheese. Then add the toasted baguette slices, then more cheese. Put in the oven and watch closely. Mine was in there for roughly 5 minutes.
