Line a baking sheet with aluminum foil and lightly grease it. Season the Potatoes: In a large bowl, toss the potato slices with olive oil (or melted butter), garlic powder, smoked paprika, salt, and pepper until evenly coated. Initial Bake: Arrange the potato slices in a single layer on the prepared baking sheet. Bake for 20–25 minutes, flipping halfway through, until the potatoes are tender and the edges are starting to crisp. Add Toppings: Remove the baking sheet from the oven. Evenly distribute the shredded sharp cheddar cheese and crumbled bacon bits over each potato slice. Final Bake: Return the tray to the oven for 5–7 minutes, or until the cheese is melted, bubbly, and slightly golden. Serve: Transfer the loaded slices to a plate.
