I’ve been eating steamed veggies such as kale, broccoli, and Brussel sprouts for breakfast. I eat it w 2 slices of tofu, tuna, and half an avocado. Sprinkle grounded flax seeds for extra nutrition. Sometimes I’ll add pico de gallo or light peanut dressing. I’ve been enjoying it so far and keeps me full for hours.

Collard Greens: Key Benefits for Diabetes Management
Steady Blood Sugar: The high fiber (nearly 8 grams per cooked cup) slows down carbohydrate absorption.
Improved Insulin Sensitivity: Collard greens are rich in magnesium and antioxidants—like alpha-lipoic acid—which help improve insulin sensitivity and reduce diabetes-related complications.
Weight Management: Being nutrient-dense and low-calorie, they help you feel full, which is highly beneficial for weight loss and overall metabolic control.
Disease Prevention: Regular consumption of leafy greens has been linked to a reduced risk of developing type 2 diabetes and protecting against diabetic retinopathy.
