(yes, you read that right😏) it is blueberry season and i could think of no better way to celebrate then making cookies. it took so many tests to make a cookie that kept the color and flavor of the blueberries without becoming super cakey BUT WE GOT THERE. thin and chewy inside with a crispy crunchy outside. i am obsessed. recipe below & on my substack (link in bio!) make them and let me know what you think!!🫐🫶🏼 RECIPE 115g (½ cup) melted unsalted butter 120g (⅔ cup) granulated sugar 60g (⅓ cup) light brown sugar 18g (1 large) egg yolk 1 tbsp vanilla bean paste (or extract) 1 tsp mexican vanilla (optional!) 50g (3 tbsp) thick blueberry reduction (just frozen blueberries cooked down till thick and jammy!) 180g (1½ cups) all-purpose flour 1g (¼ tsp) baking soda 4g (¾ tsp) kosher salt MIX INS 50g thick blueberry reduction 100g (½ cup) white chocolate chunks Whisk melted butter, blueberry reduction, sugars, egg yolk, and vanilla until smooth. Fold in flour, baking soda, and salt, then gently fold in white chocolate & leftover jam till just combined. Scoop onto a parchment-lined baking sheet and bake at 350°F (175°C) for 10–12 minutes until the edges are lightly golden and the centers still look slightly underbaked. Let set for 10 minutes. I made this. I can report they're delicious. It's quite sweet but I think reducing/eliminating the white chocolate or coarse salt at the end helps address that. It'll be a staple for me.
