A classic Russian dinner featuring tender beef stroganoff with mushrooms and onions, served with buttery egg noodles and a fresh cucumber and tomato salad. Ingredients: - 500g beef sirloin, sliced into strips - 200g mushrooms, sliced - 1 large onion, chopped - 2 tablespoons flour - 1 cup beef broth - 1 tablespoon Dijon mustard - 2 tablespoons sour cream - 2 tablespoons vegetable oil - 250g egg noodles - 2 tablespoons butter - Salt and pepper to taste - 1 cucumber, sliced - 2 tomatoes, chopped - 2 tablespoons olive oil - 1 teaspoon vinegar - Salt and pepper to taste Instructions: 1. Cook the egg noodles in boiling salted water until al dente, then drain and toss with butter; set aside. 2. In a large skillet, heat vegetable oil over medium heat. Add onions and cook until translucent. 3. Add sliced mushrooms to the skillet and cook until browned. 4. Increase heat to high, add beef strips, season with salt and pepper, and cook until browned. 5. Sprinkle flour over the beef and vegetables, stir well. 6. Gradually add beef broth, stirring constantly, then add Dijon mustard. Reduce heat and simmer for 10 minutes. 7. Stir in sour cream, adjust seasoning, and heat through. 8. In a bowl, combine sliced cucumber and chopped tomatoes. Dress with olive oil, vinegar, salt, and pepper. Toss gently. 9.
