@matchaonomu: Deep in my an-butter phase 🫘🧈 Matcha Financier Yield: 10-12 🧈 120g unsalted butter, browned 🥚 120g egg whites, room temp 🍬 100g granulated sugar 🍯 20g honey 🥜 80g almond flour, sifted 🌾 30g soft flour, sifted 🍃 12g matcha, sifted 🧂 2g salt 🫙 1g baking powder, sifted 1. Brown the butter in a small saucepan, then set aside and cool to 60°C. 2. Whisk together egg whites, sugar, and honey in a mixing bowl. 3. In a separate bowl, combine almond flour, all-purpose flour, matcha, baking powder, and salt. 4. Add the dry ingredients into the egg white mixture and mix until well combined. 5. Add the browned butter and mix until fully incorporated. Scrape the sides of the bowl with a rubber scraper. 6. Cover the bowl with plastic wrap and refrigerate for at least 3 hours to 24 hours. 7. Preheat the oven to 220°C, then brush the financier molds with butter. 8. Remove the batter from the fridge and gently mix with a spatula. 9. Transfer to a piping bag and pipe into the molds, filling them about 75% full. 10. Bake for 4 minutes, then lower the temperature to 190°C and bake for another 9 minutes. Bake longer if you prefer a crispier exterior. 11. Remove from the molds and transfer to a cooling rack. 12. Enjoy! #matcha #matcharecipe #matchadessert #financier #fyp
