@chefjjskitchen: Yemeni Makhmood @canarybasmati Ingredients: - 3 kgs chunky lamb pieces ( I used a leg of lamb ) - potatoes - an onion - 2 heads of garlic - chili - salt & pepper - 2 cups rice - 1 tbsp ghee - aromatics Note: - place the lamb pieces directly on an open flame. A flame gun, the stove or even the broiler but make sure the meat is close to it. You want to see those char marks on the meat. - wrap it with the parchment paper then double wrap it with tinfoil. Wrap it very very well. - place it in an oven at 220C for 20 minutes. Then drop the heat to 170c for 2-2:30 hours. Depending on your meat.
